Cream Cheese Frosting
Ingredients:
¾ Cup (170g) Cream Cheese, softened
⅓ Cup (76g) Butter, softened
1 ¾ Cups (190g) Icing Sugar, sifted
1 Tsp (5g) Lemon juice
1 Tsp (5g) Vanilla
Batch Yield: Enough for 12 large cupcakes
Method:
- Whip softened butter until it is light and fluffy
- Add the cream cheese and whip with butter until fluffy
- Add lemon juice, vanilla and ¼ of the icing sugar, mix until smooth
- Continue to add the remaining icing sugar in ¼s until it has all been added
- Blend until light and fluffy with no lumps
Some Tips:
Measure your flour by gently spooning it into a cup and sweep off any excess.
Do not use the measuring cup to scoop from the bag as it may compact the flour resulting in more flour than required.
