16 May Make It, Vegan! – Cloud 9 Gluten-Free Baking Mixes
Our baking mixes are gluten-free, Kosher and free from all 10 major food allergens, so they meet the specialty diet requirements for a broad spectrum of customers including those who prefer Vegan.
We have done our homework and want to share the best Vegan options to make our mixes easy and tasty.
All-Purpose – Baking Mix:
This is a cup for cup flour replacement so make your Vegan recipes knowing that you can rely on consistently delicious results!
Pancake & Waffle Mix:
Regular Pancake or Waffles you will need:
- 1 1/2 cups Cloud 9 Pancake & Waffle Mix
- 1 ¼ cups milk
- 2 eggs
- 2 tbsp vegetable oil
Vegan Waffles or Pancakes you will need:
- substitute milk with almond, coconut, oat or rice milk and
Replace the 2 eggs with 1/2 cup apple sauce or ripe mashed bananas.
Chocolate Chip Cookie Mix:
Regular Cookies you will need:
- 1 egg
- 1/2 cup melted and cooled butter
- 2 Tbsp water
- 1 tsp vanilla
Vegan Cookies you will need:
- Substitute butter with butter substitute like earth balance and reduce the amount to only ¼ cup. Substitute egg with 3 Tbsp aquafaba (canned chickpea brine).
Result: nice formed cookies, crispy and gooey.
Additional VEGAN option: Substitute water, egg and butter with: 1/3 cup vegetable oil, 3 Tbsp apple sauce plus 1 Tbsp of almond butter.
Brownie Mix
Regular Brownies you will need:
- 2 eggs
- 3 Tbsp butter
- 1/3 cup vegetable oil
- 1/3 cup water
- 1 tsp vanilla
Vegan Brownies you will need:
BEST VEGAN OPTION
Replace the 2 eggs with 1/2 cup apple sauce; replace the 3 Tbsp butter with vegetable oil and omit the 1/3 cup oil.

Result: Nice and firm, not too sweet or gooey or oily
SECOND OPTION
Replacing eggs with 1 Tbsp ground flaxseed + 3 Tbsp warm/hot water
make flax egg by combining flaxseed with water, stir and let sit for 5 minutes.
Add into wet mixture
Result: firmer brownie texture
THIRD OPTION
Substitute butter with 2 Tbsp vegetable oil.
Substitute egg with 3 Tbsp canned chickpea brine.
Chocolate cake & cupcake mix:
Regular cake/cupcake you will need:
- 3 eggs
- 1 1/2 cups water or milk
- 1/2 cup oil (canola or corn)
- 1 tsp vanilla
Vegan cake/cupcake you will need:
Replace the 3 eggs with 3 Tbsp (24g) ground flaxseed + 6 Tbsp (84g) warm/hot water
make flax egg by combining flaxseed with water, stir and let sit for 5 minutes.
Add wet mixture into flax egg mixture and add dry mixture into wet mixture and mix
Result: nice and fluffy cake and more moist than regular cake mix result.
