Cream of Mushroom Soup

Cream of Mushroom Soup

Ingredients:

  • 1 tbsp (10g) Cloud 9 All-Purpose Baking Flour
  • 3 tbsp (42g) butter
  • 1 tbsp (10g) chopped onion
  • 1 cup (75g-85g) finely chopped mushrooms
  • 2 cups (480g) milk or chicken stock
  • 1/2 cup (115g) whipping cream
  • 1 pinch nutmeg
  • Salt & pepper

Directions:

  1. Melt the butter in a large pot.
  2. Add the onions and mushrooms and cook on low heat for 15 minutes.
  3. Stir in Cloud 9 Baking Mix, then add the milk or chicken stock slowly.
  4. Bring the soup to just a boil, then reduce the heat and simmer for 20 minutes.
  5. Add the nutmeg and season to taste with salt and pepper.
  6. Just before serving, add the whipping cream and heat, but do not boil. Serves 4 to 6 people.

Some Tips:

Measure your flour by gently spooning it into a cup and sweep off any excess.
Do not use the measuring cup to scoop from the bag as it may compact the flour resulting in more flour than required.
