Chocolate Orange Muffins

Dry Ingredients:
454g      2 Cups Cloud        9 APBM
7g           1 ½ Teaspoons    Baking Powder
1g            ¼ Teaspoons      Baking Soda
1g            ⅛ Teaspoon        Salt
76g          ⅓ Cup                   Cocoa Powder

Wet Ingredients:
50g        1                              Egg
152g       ⅔ Cup                   Sugar
57g         ¼ Cup                  Butter
2                                            Large oranges worth of zest
76g         ⅓ Cup                   Orange juice
296g       1 ¼ Cup              Milk
113g        ½ Cup                Chocolate chips

Batch Yield: ~18 medium-sized muffins

Method:
● Preheat oven to 350°F
● In a medium bowl, sift together dry ingredients, set aside
● In a large bowl, beat eggs and sugar until creamy
● Add softened butter and beat well
● Add milk, orange juice and orange zest, mix until combined
● Mix in chocolate chips until evenly distributed throughout the batter
● Fill prepared muffin pans ¾’s full, and flatten out the batter with a small spatula
○ (this will allow for a nice even dome on your muffin)
● Bake for 12-17 minutes on the middle oven rack
● Enjoy slightly warm, for gooey chocolate chips
