Chocolate Orange Muffins
Dry Ingredients:
2 Cups (320g) Cloud 9 APBF
1 ½ Tsp (6g) Baking Powder
¼ Tsp (1.25g) Baking Soda
⅛ Tsp (0.75g) Salt
⅓ Cup (40g) Cocoa Powder
Wet Ingredients:
1 Egg (50–52g)
⅔ Cup (134g) Sugar
¼ Cup (56.5g) Butter
2 Large oranges worth of zest (12g)
⅓ Cup (83g) Orange juice
1 ¼ Cup (300g) Milk
½ Cup (85g) Chocolate chips
Batch Yield: ~18 medium-sized muffins
Method:
● Preheat oven to 350°F
● In a medium bowl, sift together dry ingredients, set aside
● In a large bowl, beat egg and sugar until creamy
● Add softened butter and beat well
● Add milk, orange juice and orange zest, mix until combined
● Mix in chocolate chips until evenly distributed throughout the batter
● Fill prepared muffin pans ¾ full, and flatten out the batter with a small spatula
○ (This will allow for a nice even dome on your muffin)
● Bake for 12–17 minutes on the middle oven rack
● Enjoy slightly warm, for gooey chocolate chips


Some Tips:
Measure your flour by gently spooning it into a cup and sweep off any excess.
Do not use the measuring cup to scoop from the bag as it may compact the flour resulting in more flour than required.
