Cream Cheese Frosting
Ingredients:
¾ Cup Cream Cheese, softened
⅓ Cup Butter, softened
1 ¾ Cups Icing Sugar, sifted
1 Tsp Lemon juice
1 Tsp Vanilla
Batch Yield: Enough for 12 large cupcakes
Method:
- Whip softened butter until it is light and fluffy
- Add the cream cheese and whip with butter until fluffy
- Add lemon juice, vanilla and ¼ of the icing sugar, mix until smooth
- Continue to add the remaining icing sugar in ¼’s until it has all been added
- Blend until light and fluffy with no lumps
