Cloud 9 Strawberry Cobbler

This is a delicious and easy to make gluten-free cobbler that bakes into a thick, sweet and tart desert that everyone will love.

Batter Ingredients:

1 Cup (160g) Cloud 9 Flour
1 ½ tsp (6g) Baking Powder
½ tsp (3g) Salt
1 Cup (200g) Granulated Sugar
½ Cup (113g) Butter – Melted
1 Cup (240g) Milk

Strawberry Mixture Ingredients:

4 Cups (608–615g) Hulled, Halved Strawberries
½ Cup (100g) Granulated Sugar
2 Tbsp (16g) Cornstarch
2 tsp (10g) Lemon Juice

Batch Yield: 1 Delicious Cobbler

Baking Instructions:

1. Preheat oven to 350F
2. Grease one 10” round pie plate with butter or you can use a square 8” x 8” casserole dish
3. Sift the flour, baking powder, and salt together, add 1 cup sugar and stir.
4. Add milk to dry mix then slowly whisk in the melted butter
5. Pour batter into the pie plate
6. Prepare the strawberry mixture by tossing the strawberries with the ½ cup sugar, cornstarch, and lemon juice
7. Scoop the strawberry mixture into the batter evenly then arrange a few whole strawberries on top
8. Sprinkle with additional sugar – about 2 tablespoons
9. Bake for 55–60 minutes until golden brown on top – Check with thermometer for fully cooked – should be 200F
10. Serve with additional strawberries, ice cream or whipped cream, and ENJOY!

You can store at room temperature for up to 2 days – if it lasts that long…

Some Tips:

Measure your flour by gently spooning it into a cup and sweep off any excess.
Do not use the measuring cup to scoop from the bag as it may compact the flour resulting in more flour than required.
