02 Jun Sheila’s Best Oatmeal Cookies
Dry Ingredients:
1 ½ Cups (240g) C9 All-Purpose Baking Flour
3/4 Cup (58g) Finely chopped Walnuts
1 ½ Cups (150g) Quick Rolled Oats
1 Tsp (2.5g) Cinnamon
1 Tsp (5g) Baking Soda
Wet Ingredients:
1 Cup (227g) Butter, softened
1 Cup (200g) White Sugar
½ Cup (105g) Brown Sugar (lightly packed)
1 Egg (50g–52g) Beaten
1 Tsp (5g) Vanilla
Batch Yield: ~24 cookies
Baking Instructions:
- 1. Preheat oven to 350°F
- 2. Grease cookie sheets lightly or line with parchment paper
- 3. In a medium bowl, combine all dry ingredients, set aside
- 4. In a large-sized bowl, cream butter and sugar together then add remainder of wet ingredients
- 5. Combine the dry ingredients into wet and blend until blended together
- 6. Scoop by full tablespoon onto prepared cookie sheets
- 7. Bake for 12–14 mins on the middle oven rack
- 8. Remove from cookie sheet and let cool on a rack.

Some Tips:
Measure your flour by gently spooning it into a cup and sweep off any excess.
Do not use the measuring cup to scoop from the bag as it may compact the flour resulting in more flour than required.
