22 May Marble Cake
Dry Ingredients:
1 Cup + 2 Tbsp (180g) Cloud 9 Gluten Free All-Purpose Baking Flour
½ Tsp (3g) Salt
1 Tsp (4g) Baking Powder
½ Tsp (2.5g) Baking Soda
3 Tbsp (22.5g) Cocoa Powder
Wet Ingredients:
1 Cup (200g) Sugar
3 Eggs (150–156g)
¼ Cup + 1 Tsp (66g) Canola Oil
⅓ Cup + 1 Tsp (90g) Applesauce
⅔ Cup (160–165g) Milk
1 ½ Tsp (7.5g) Vanilla
Batch Yield: 1 × 9” Cake, with two layers
Method:
- Preheat oven to 350°F
- In a small bowl, sift together baking flour, salt, baking powder and baking soda, set aside
- Sift cocoa powder into a separate small container, set aside
- In a medium bowl, mix the eggs and sugar until the sugar has dissolved
- Add the remaining wet ingredients to the eggs and sugar, and mix until incorporated
- In three stages, slowly incorporate the sifted dry ingredients
- Take half of the batter and, in a separate bowl, mix in the sifted cocoa powder
- In a prepared baking pan, alternate placing the two batters until all batter is used
- With a skewer, drag through the batter to create a marbled effect
- Bake for 30–45 minutes in a 9” springform pan until an inserted skewer comes out clean
- For other pans, baking time will vary

Some Tips:
Measure your flour by gently spooning it into a cup and sweep off any excess.
Do not use the measuring cup to scoop from the bag as it may compact the flour resulting in more flour than required.
