Marble Cake

Dry Ingredients:

1 Cup + 2 Tbsp                    APBM
½ Tsp                                   Salt
1 Tsp                                      Baking Powder
½ Tsp                                   Baking Soda
3 Tbsp                                   Cocoa Powder

Wet Ingredients:

1 Cup                                    Sugar
3                                            Eggs
¼ Cup + 1 Tsp                   Canola Oil
⅓ Cup + 1 Tsp                    Applesauce
⅔ Cup                                   Milk
1 ½ Tsp                                Vanilla

Batch Yield: 1-9” Cake, with two layers

Method:

  • Preheat oven to 350°F
  • In a small bowl, sift together APBM, salt, baking soda and powder, set aside
  • Sift cocoa powder into a separate small container, set aside
  • In a medium bowl, mix the eggs and sugar until the sugar has dissolved
  • Add the remaining wet ingredients to the eggs and sugar, and mix until incorporated
  • In three stages, slowly incorporate the sifted APBM, salt, baking powder, and soda
  • Take half of the batter and in a separate bowl, mix in the sifted cocoa powder from earlier
  • In a prepared baking pan, alternate placing the two batters until you have used all the batter
  • With a skewer, drag through the batter to create a marbled effect
  • Bake for 30-45 minutes in a 9” springform pan until an inserted skewer comes out clean
    • For other pans, baking time will vary
